The original kolaches were traditionally sweet and open faced, with fillings such as poppyseed, apricot and prune. BUT over time, with influences from different cultures that also made Texas their home, the savory varieties that inspired our Happy Sparrow kolaches was born! It is our honor to share the history of the kolache and pay special homage to its Czech roots. These special little buns were first introduced to Texas by Czech immigrants who settled in the Lone Star State as far back as the 1800s. It’s a relaxing blend that is just one of many they offer from Strava. The most interesting thing on the menu is a CBD-infused coffee from Strava Craft Coffee. The menu looks like a simple paper bag that hangs from behind the register. It’s a warm and inviting space with clean lines and just the right amount of warm wood tones. The simple tile flooring brings everything together. They maximized the seating with a long banquette and stool seating against the window. It’s bright and modern with white walls and exposed brick. The tiny 470 square foot space is small like a sparrow. The name Blue Sparrow Coffee refers to the beautiful blue bar and seating area. He was able to create the perfect environment for his customers. Since he knew what he loved and what he hated. After helping open another coffee house, he realized he too wanted his own corner cafe.
